Almond Butter Oatmeal

Breakfast is the most important meal of the day they all say! Other than needing it to start a day with a long to-do list to go through ahead, it’s especially needed when it’s cold outside and you need to warm up a little bit before venturing out.

My gluten-free, dairy free oatmeal bowl is not only belly-warming, it’s sweet and gooey!

Here’s what you need:

½ cup of gluten free steel cut oats

1 cup of water

½ cup of almond milk

1 banana

1 tbsp of almond butter

1 tsp of raw honey (optional)*

1) Pour oatmeal and water in a sauce pan on high heat

2) Bring to a boil and reduce heat

3) Add almond milk

4) peel banana and slice into dimes

5) once water is mostly boiled away and oatmeal thickens, remove from heat

6) pour oatmeal and banana mixture into a bowl

7) spoon in the almond butter and swirl

8) optional-if you would like to add a little more sweeteness, add the raw honey and swirl again.

Sugar warning: Oatmeal, bananas and honey will spike your blood sugar. In order to reduce the spike slightly, have the oatmeal with a hard-boiled egg. Consume oatmeal and bananas no more than twice a week.

This dish is best designed for a Saturday morning treat after a long week.
